Stuffed Pepper Stuffed Burger

1 tub Tre Stelle® Bocconcini Medallions, cut into halves 4 miniature sweet peppers, tops cut off, seeds removed 1 lb ground beef ½ tsp seasoning salt olive oil for brushing burgers prior to grilling 4 burger buns
Preheat outdoor grill or stove-top grill pan to medium-high. Grill peppers until just tender and skins begin to blister; remove from heat and cool slightly. Stuff each pepper with a couple of slices of Bocconcini Medallions. Gently mix beef and seasoning salt in a bowl and divide mixture into four portions. Shape each portion around the stuffed peppers to completely enclose it; flatten slightly and brush with olive oil. Grill burgers for 12-18 minutes; depending on your preference of doneness. Serve on toasted buns with your favourite toppings – we suggest salsa or guacamole!
