Sunny Side Up Spinach and Tre Stelle® Piave Pasta 

The added protein of an egg makes this pasta an easy and delicious dish!

2 tbsp | 30 mL olive oil 4 cloves garlic, peeled and thinly sliced 1 large bag baby spinach pinch red pepper flakes 2 tbsp | 30 mL butter 4 eggs salt and pepper to taste 1 package | 454 g linguini-style pasta 3/4 cup | 175 mL Tre Stelle® Piave Cheese, grated Additional Tre Stelle® Piave Cheese, grated for garnish


In a large pot of boiling salted water cook the pasta until al dente, drain and set aside. Heat olive oil in a large skillet on medium high heat. Add the garlic and sauté for about 1 minute, until the garlic just begins to brown. Add the spinach and toss to coat it with the olive oil and garlic. Cover the pan and cook for 1 minute. Uncover and cook for an additional 2 minutes. Drain any excess moisture from the pan. Drizzle with a little more olive oil, season with salt, pepper and red pepper flakes. In a small non-stick pan over medium heat, add butter and fry one egg for each serving; season with salt and pepper. Add cooked pasta to skillet with spinach and stir in Piave Cheese. Divide pasta into 4 portions, top each portion with a fried egg and additional Piave Cheese if desired.
