Cake 1 pkg | 515 g yellow cake mix 1 tsp | 5 mL espresso powder or coffee flavoured liqueur 1/4 cup | 60 mL espresso or strong coffee 1 tbsp | 15 mL coffee flavoured liqueur Filling 1 tub | 275 g Tre Stelle® Mascarpone 1/2 cup | 125 mL confectioners’ sugar 2 tbsp | 30 mL coffee flavoured liqueur Frosting 2 cups | 500 mL whipping cream 1/4 cup | 60 mL confectioners’ sugar unsweetened cocoa powder and chocolate curls for garnish if desired
Preheat oven to 350ºF (175ºC). Grease and flour three – 9” round cake pans. Prepare the cake mix according to directions on the package. Divide two-thirds of the batter between two pans; stir espresso powder into the remaining batter and pour into remaining pan. Place in oven and bake for approximately 20 minutes, or until toothpick inserted into the centre of the cake comes out clean. Allow to cool on a cooling rack for 10 minutes; carefully turn out onto rack and allow to cool completely. In a small bowl combine espresso or strong coffee and coffee liqueur; set aside. Filling: In a medium bowl combine the filling ingredients and beat until smooth and creamy. Frosting: In a large bowl combine whipping cream and confectioners' sugar. Beat with an electric mixer until mixture is stiff. Fold 1/2 cup of this mixture into the Filling mixture. Assembly: Place one yellow layer of cake on a serving plate. Using a skewer, poke holes in cake approximately 1” apart; drizzle one third of the coffee mixture over cake, spread with half of the filling mixture. Top with coffee cake layer and repeat as above, ending with yellow cake layer on top. Spread top and sides of cake with frosting. Garnish with cocoa and chocolate curls if desired.
