Tre Stelle® Mascarpone Chocolate Nougat Cookies

Makes approximately 30 cookies
1/2 cup | 125 mL butter 1/3 cup | 75 mL Tre Stelle® Mascarpone 3/4 cup | 175 mL brown sugar 1/4 cup | 60 mL granulated sugar 1 large egg 2 tsp | 10 mL vanilla extract 2 1/4 cups | 560 mL all purpose flour 2 tsp | 10 mL cornstarch 1 tsp | 5 mL baking soda 2 cups | 500 mL roughly chopped Toblerone® chocolate bar
In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, Mascarpone and sugars; blend until smooth. Add the egg and vanilla extract; continue to blend on medium-high until light and fluffy. Scrape down sides of bowl: add flour, cornstarch and baking soda, mix until just combined. Stir in Toblerone® pieces and combine until incorporated. Place tablespoon-fulls equally apart on a large cookie sheet; flatten mounds slightly. Cover cookie sheet with plastic wrap and refrigerate for two hours and remove from refrigerator 15 minutes prior to baking. *Preheat oven to 350ºF (180ºC). Bake for 10 minutes; allow to cool on baking sheet for 5 minutes prior to transferring to rack to continue cooking.
