6 mini mini Tre Stelle® Bocconcini balls 1 cup multi coloured quinoa, cooked and cooled 6 cherry tomatoes, cut in halves Fresh basil Simple Italian dressing Salt and freshly ground black pepper
Place Bocconcini, quinoa and tomatoes in a small container; top with Bocconcini, drizzle with dressing and garnish with basil. Refrigerate or keep cool until ready to use. Italian Style Dressing: ¼ cup olive oil, 2 tbsp lemon juice, 2 tbsp wine vinegar, 1 small glove of garlic, finely minced, 1 tsp dried Italian seasoning, 1 tsp Dijon mustard, pinch red chili flakes (optional), salt and freshly ground black pepper. Place all ingredients in a jar and shake, shake, shake. Makes 4 servings.
