2 cups | 500 mL Tre Stelle® Parmigiano Reggiano, grated 1 1/4 cups | 375 mL all purpose flour pinch salt and pepper 1 tsp | 5 mL dried oregano 2 eggs 1/4 cup | 50 mL milk 1 lb | 454 g Tilapia filets, defrosted if frozen 1/4 cup | 50 mL butter


Preheat oven to 350ºF (175ºC). In a medium bowl, combine 2 tablespoons of the flour with Parmigiano Reggiano; set aside. Combine remaining flour, salt, pepper and oregano in another bowl. In a third bowl whisk together eggs and milk. Dredge Tilapia filets first in seasoned flour mixture, then in egg and finally in Parmigiano Reggiano/flour mixture. Melt butter in a large non-stick skillet and cook filets in two batches for approximately 2 minutes on each side. Remove from pan and transfer to a baking sheet. Bake for approximately 10 minutes or until fish is cooked through.
