Avocado Pesto Bruschetta with Tre Stelle® Bocconcini

Think of this as guacamole Italian-style!
Instructions
Preheat oven to broil.
Preparation: Cut the fresh baguette into 12 slices, each 1/2” thick. Peel and cut the garlic clove in half. Roughly chop the avocados. Cut the cherry or grape tomatoes into quarters. Mince the second garlic clove. Chop the cilantro.
Brush each side of bread slices with olive oil and place on a baking sheet.
Broil until golden brown approximately 2 minutes per side.
Remove from oven and rub with garlic clove halves.
In a medium bowl mash avocados with lime juice; season with salt and pepper.
In a separate medium bowl combine tomatoes, garlic, olive oil and cilantro.
Spread avocado mixture onto each slice of toasted bread slices, top with a slice of Tre Stelle® Bocconcini Medallions and tomato mixture.
Garnish with additional cilantro (optional).
Serve and enjoy!
