An Italian original, Asiago comes in two distinct flavours, depending on age. Fresh Asiago is delicate and sweet, like milk fresh from the farm. Ripened Asiago has a much more assertive flavour, depending on the length of the maturing period. It’s delicious in dips and on pizza and aged Asiago is perfect for grating – try it as an alternative to Parmesan on a Caesar salad.
