Baked frittata with bell peppers, red onion and Tre Stelle Ricotta

Ingredients:

¼ green bell pepper, chopped ¼ red bell pepper, chopped 5-6 slices of red onion 4 eggs 100 gr. of Tre Stelle Ricotta 3 tbsp. of olive oil Salt and pepper

Instructions:

Preheat the oven at 360F. In a pan heat the oil for 30 seconds and then add the peppers. Let it cook for 5-7 minutes, stirring often. Add the onion slices and a pinch of salt, keep cooking for 2-3 minutes. Turn the heat off and let it cool down a bit. In the meanwhile, whisk the eggs with a pinch of salt and pepper, and then whisk in the Ricotta. Mix until you get a homogeneous mixture. Add the vegetable to the egg and Ricotta mixture. Pour into a baking pan and cook for about 25-30 minutes. Serve warm or at room temperature.
