Tre Stelle® Classic Sicilian Cannoli

Makes 24 cannoli
24 Cannoli shells 1 tub | 475 g Tre Stelle® Ricotta Cheese 1/2 cup | 125 mL Icing sugar 1/4 cup | 50 mL mini chocolate chips 1/4 tsp | 1 mL cinnamon 1/2 tsp | 2 mL vanilla 1/4 cup | 50 mL whipping cream, whipped 1 tbsp | 15 mL chopped almonds or pistachios (optional)
In a medium bowl, combine ricotta, sugar, chocolate, cinnamon and vanilla. Mix well. Fold in whipped cream. Place filling into a pastry bag and pipe filling into cannoli shells. Sprinkle nuts on ends. Dust filled shells lightly with powdered sugar. Alternative Filling: Add 3 tbsp of cocoa and 1 tsp grated fresh orange peel. Dip shell edges into melted chocolate before filling. Garnish ends with chocolate sprinkles.
