No-Bake Orange Chocolate Tre Stelle® Ricotta Cheesecakes

Makes 12 mini Cheesecakes
Crust 1 cup | 250 mL chocolate cookie crumbs 3 tbsp | 45 mL butter, melted 2 tbsp | 30 mL honey Filling 1 cup | 250 mL boiling water 1 pkg | 3 oz orange flavoured gelatin 1 tub | 454 g Tre Stelle® Extra Smooth Ricotta Cheese 1 cup | 250 mL whipping cream 1 tbsp | 15 mL fresh orange zest 1/4 cup | 60 mL confectioners sugar 1 tsp | 5 mL vanilla extract
Line 12 muffin cups with paper liners. Combine all crust ingredients to form a crumbly mixture. Place a heaping tablespoon of crust mixture into each cup and press firmly on the bottom and a little up the sides of each. Refrigerate until ready to fill. Meanwhile combine boiling water with orange gelatin; stir and set aside till cool (do not refrigerate). Add Ricotta Cheese to a medium bowl and with a mixer, beat until smooth. Add 3/4 cup of gelatin/water and continue to beat until combined. In a separate bowl whip 1/2 cup of the whipping cream and fold into the Ricotta Cheese mixture. Stir in the orange zest and pour equal amounts into paper-lined muffin cups. Cover and refrigerate overnight or allow at least 6 hours to set. Whip remaining whipping cream with confectioners sugar and vanilla; top on each cheesecake and serve.
