Dipping Sauce 2 cups | 185 g fresh or frozen cranberries 1 cup | 250 mL orange juice 1 1/2 cups | 375 mL water 1 tbsp | 15 mL freshly grated ginger root 1 tbsp | 15 mL maple syrup pinch salt 1 tbsp | 15 mL freshly grated orange zest Fingers 1 cup | 250 mL panko bread crumbs 3/4 cup | 175 mL Tre Stelle® Grana Padano Cheese, grated 2 large egg 1/4 cup | 60 mL all purpose flour 1 lb | 454 g turkey breast, skinless, cut into 1” strips 1 tbsp | 15 mL Italian seasoning 1 tsp | 5 mL granulated garlic 1/2 tsp | 2 mL freshly ground black pepper pinch salt


Place all dipping sauce ingredients into a stainless steel saucepan; bring to boil. Reduce heat and simmer until mixture is reduced by half – approximately 40 minutes. Remove from heat and allow to cool slightly. With an immersion blender purée until smooth. Can be served warm or chilled. Preheat oven to 450ºF (232ºC). In a shallow dish, combine panko and Grana Padano Cheese; set aside. In another shallow dish, add eggs and lightly beat with a whisk; set aside. And, in another shallow dish add flour; set aside. Toss turkey strips with Italian seasoning, garlic, black pepper and salt. Coat each strip in flour, shaking off excess. Dip in egg and allow excess to run off, then roll in panko/cheese mixture. Place strips on a baking rack and sit rack on a cookie sheet. Bake for 10 minutes, turn and continue to bake for an additional 10 minutes. Serve with Cranberry Dipping Sauce.
