1/3 cup Tre Stelle® Ricotta Cheese 2 tbsp Tre Stelle® Grated Parmesan Cheese 2 large eggs 2 tbsp milk or heavy cream salt and freshly ground black pepper


In a small bowl whisk eggs, milk/cream, Parmesan, salt and pepper together until frothy. Spray a medium non-stick skillet with cooking spray; set heat to medium. Pour the egg mixture into the skillet and cook until the eggs begin to set; approximately 4 minutes (a cover over the skillet works well to cook the top & bottom of the omelet evenly). When top surface of eggs are thickened, place Ricotta mixture on one side of the omelet; fold in half with spatula. Optional: before flipping the omelet, top Ricotta mixture with combinations of the following: Sautéed spinach and mushrooms Avocado and salsa Kimchi Crumbled bacon and honey
