Seared Scallops with Tre Stelle® Feta Mango Salsa

Makes 8 single servings
1 ripe mango, sliced and finely diced 1/2 red onion, finely diced 1 jalapeño pepper, minced 1/2 cup | 125 mL Tre Stelle® Crumbled Feta Cheese 1 tbsp | 15 mL freshly grated lime zest 1 tbsp | 15 mL freshly squeezed lime juice 1 tbsp | 15 mL olive oil 4 fresh basil leaves, finely julienned salt and black pepper to taste canola oil 8 fresh sea scallops salt and black pepper
Mango Salsa: Combine all of the salsa ingredients together in a medium bowl. Cover and refrigerate until ready to use. For maximum flavour allow salsa to come to room temperature prior to serving. Scallops: Rinse scallops under cold water, drain and dry well with paper towels. In a large non-stick skillet add enough canola oil to cover the bottom of the pan. Heat until moderately hot over medium-high heat. Season scallops with salt and pepper; add to pan. Cook without touching for 1 minute. Carefully turn and cook for an additional 2 minutes. Remove scallops from skillet and place on a serving dish; top with Mango Salsa and serve.
