Strawberry Banana Tre Stelle® Ricotta Parfaits with Quick Almond Brittle

A kid-friendly dessert made adult with the touch of almond brittle - a healthy alternative to an ice cream parfait.

Ingredients:

Almond Brittle: 1 cup | 250 mL granulated sugar 1/2 cup | 125 mL water 3/4 cup | 175 mL sliced almonds 1 tub | 475 g Tre Stelle® Extra Smooth Ricotta Cheese, drained 3 medium ripe bananas, peeled and cut into 1/4” cubes 1/2 cup | 125 mL granulated sugar 1 tsp | 5 mL vanilla 1/2 tsp | 2 mL nutmeg 2 cups | 500 mL ripe, fresh or frozen strawberries, sliced whipped cream and additional strawberries for garnish (optional) 4 parfait glasses

Instructions:

For the brittle: Line a baking sheet with aluminum foil and spray lightly with cooking spray. Add sliced almonds and spread evenly onto sheet; set aside. In a medium heavy, non-aluminum saucepan add sugar and water and cook over medium-high heat. Bring to boil without stirring about 10 minutes or until candy thermometer reaches 310°F. Carefully pour mixture onto almonds and quickly smooth out with a metal spatula. Allow to cool and break into bite sized pieces. In a food processor or blender, purée Ricotta, 2 bananas, 1/4 cup sugar, vanilla and nutmeg until smooth. Stir in remaining banana, cover and refrigerate until ready to use. Rinse food processor bowl or blender and combine strawberries with remaining 1/4 cup sugar. Puree until smooth; cover and refrigerate until ready to use. Starting with strawberry mixture on the bottom, add Ricotta/banana mixture equally into all four parfait glasses. Top with whipped cream and strawberry slices if desired.
