Tre Stelle® Pasta Carbonara

Makes 4 - 6 servings
1 package | 454 g dried pasta 8 slices pancetta or bacon, cooked until crisp, drained on paper towels and broken into small pieces. 4 eggs 1 cup | 250 mL Tre Stelle® Parmigiano Reggiano Cheese, grated 1/2 cup | 125 mL heavy cream salt and pepper to taste 1/4 cup | 60 mL butter 1/4 cup | 60 mL flat leaf parsley, chopped
Bring a large saucepan of salted water to boil. Add pasta and cook until al dente. Meanwhile in a medium bowl add eggs, Parmigiano Reggiano Cheese, cream and salt and pepper; stir until blended. Drain pasta and return to saucepan; add butter and stir until melted. Add bacon and egg mixture and stir gently until blended. Garnish with parsley and additional Parmigiano Reggiano Cheese if desired.
