Black Bean and Guacamole Tacos

1 tbsp | 15 mL olive oil 1/3 cup red onion, diced 1 poblano pepper, seeds removed, finely diced 1/2 cup red bell peppers, finely diced 1 can black beans, rinsed and drained 1/2 cup fresh corn 1 tsp cumin 2 cups guacamole 2 handfuls red cabbage, shredded 3/4 cup | 88 g Tre Stelle® Mozzarella Ball, shredded 4 small tortillas (flour or corn), warmed garnish with fresh cilantro (optional) and fresh lime juice
In a medium skillet over medium heat, add the oil. Sauté the onion, poblano pepper, and bell pepper together until soft – approximately 5 minutes. Stir in the black beans, corn, and cumin; cook for an additional 5 minutes. Spread each tortilla with guacamole. Top with shredded cabbage, bean mixture, and shredded mozzarella. Garnish with fresh cilantro (optional) and a squeeze of fresh lime.
