Ham, Tomato, Pesto Tre Stelle® Bocconcini Bites

Pesto 1 garlic clove 1/3 cup |60 mL walnuts 1/2 tsp | 2 mL salt 1/2 tsp |2 mL freshly ground black pepper 1/2 tsp | 2 mL chili flakes 1 1/2 cups |325 mL fresh basil leaves 1/3 cup |60 mL Tre Stelle® Grated Parmesan Cheese 4 tsp |20 mL olive oil 12 wonton wrappers 1/2 cup |125 mL cooked ham, cut into 1/4” cubes 6 cherry tomatoes, halved 12 Tre Stelle® mini mini Bocconcini, drained
Pesto: Place garlic, walnuts, salt, pepper and chili flakes into the bowl of a food processor and pulse until blended. Add basil leaves and Parmesan Cheese; pulse again, gradually whirl in olive oil. Set aside until ready to use. Preheat oven to 350ºF (180ºC). Lightly grease 6 insides of a muffin tin. With a spray bottle or kitchen brush, gently wet the tops of 6 wonton wrappers, place another wrapper on each in an alternate direction, creating 8 points. Press into muffin tin to create a cup-like shape. Bake for 5 minutes or until bottoms begin to brown. Remove from oven and evenly distribute ham cubes, a scant teaspoon of pesto, Bocconcini and tomato halves. Return to oven and bake for an additional 15-20 minutes, or until cheese has completely melted, and wontons are golden brown and crispy. Serve immediately.
