Tre Stelle® Asiago Bucatini with Shrimp

16 medium fresh or defrosted shrimp salt and pepper to taste 1 | 450g package, dried bucatini pasta 1/3 cup | 75 mL freshly squeezed lemon juice 1/4 cup | 50 mL olive oil 1/2 cup | 175 mL Tre Stelle® Asiago Shredded Cheese 1 cup | 250 mL fresh basil leaves 1 tbsp | 15 mL capers, rinsed and patted dry
In a small bowl whisk together lemon juice, olive oil, salt and pepper. Add Asiago cheese and basil leaves, set aside. Season shrimp with salt and pepper. In a medium non-stick skillet quickly stir-fry shrimp until pink. Remove from heat. In a large pot of boiling salted water add pasta and cook until al dente. Drain and add lemon/cheese sauce, shrimp, capers and basil, stir and serve.
