Tre Stelle® Baked Artichokes
Stuffed and seasoned with breadcrumbs and Grana Padano, this recipe is reminiscent of an old Italian favourite but is baked.Prep Time:

Makes 4 servings
4 medium fresh artichokes 3/4 cup | 175 mL Tre Stelle® Grana Padano Cheese, grated 3/4 cup | 175 mL Italian seasoned bread crumbs 1 tbsp | 15 mL fresh parsley, finely chopped 3 cloves garlic, minced 1 tsp | 5 mL black pepper 1 tsp | 5 mL lemon zest 1/3 cup | 75 mL olive oil 1/2 cup | 125 mL dry white wine or water 2 tbsp 30 mL Tre Stelle® Grana Padano Cheese, grated drizzle olive oil for garnish if desired
Trim the artichokes and boil in a large pot of salted water until near tender approximately 10 minutes. Remove from heat and drain. Place artichokes cut-side down on paper towels to cool. Preheat the oven to 375°F (190°C). In a medium bowl combine Grana Padano Cheese, breadcrumbs, parsley, garlic, pepper, lemon zest and oil; stir to combine. Carefully spread leaves of artichokes apart, leaving them attached and place scant half-teaspoonfuls of mixture between leaves equally for all four artichokes. Place in a baking dish and add white wine or water. Cover and bake for 25 minutes. Last 10 minutes of baking remove cover and sprinkle with 2 tablespoons of Grana Padano Cheese. Remove from oven and garnish with a drizzle of olive oil if desired.
